Asian-Inspired Noodle Bowl

with Steak and Toasted Peanuts

Tender steak and chow mein noodles come together in an Asian-inspired cold noodle dish with fresh herbs, savoury-umami flavours and crunchy peanuts.

Cooking Steps

Boil water and prep

  • Before starting, preheat the oven to 450°F.
  • Wash and dry all produce.
  • Bring a large pot of salted water to a boil over high.
  • Meanwhile, cut cucumber into thin matchsticks.
  • Roughly chop cilantro.
  • Pick mint leaves from stems, then roughly chop.
  • Zest, then juice lime.
  • In a medium bowl, whisk together tahini sauce, soy sauce, half the Moo Shu Spice Blend, 1 tbsp (2 tbsp) lime juice, 1 tsp (2 tsp) lime zest, 1/2 tsp (1 tsp) sugar and 1 1/2 tbsp (3 tbsp) oil. (NOTE: This is your noodle sauce.)
Toast peanuts

  • Heat a large non-stick pan over medium. 
  • When hot, add peanuts to the dry pan. Toast for 4-5 min, stirring often, until golden. (TIP: Keep your eye on them so they don't burn.) 
  • Remove from heat.
  • Transfer to a plate.
Sear steak

  • Pat steaks dry with paper towels. Season with salt, pepper and remaining Moo Shu Spice Blend.
  • Reheat the same pan over medium-high.
  • When hot, add 1 tbsp (2 tbsp) oil, then steaks. Cook for 1-2 min per side, until browned. (NOTE: Steaks will finish cooking in step 4.)
  • Remove from heat. To an unlined baking sheet, transfer steaks.
Roast steaks

  • Roast steaks in the top of the oven for 4-7 min, or until cooked to desired doneness.**
  • When steaks are done, transfer to a plate and set aside to rest for 2-3 min.
Boil noodles

  • Meanwhile, to the boiling water, add noodles. Cook for 1-3 min, stirring occasionally, until tender but still firm to the bite.
  • Strain and rinse noodles with cold water.
  • Return noodles to the pot, add noodle sauce from step 1 and fish sauce, then toss to coat.
Finish and serve

  • To the pot with dressed noodles, add carrots, cucumbers, half the cilantro, half the mint and half the peanuts, then toss to combine.
  • Thinly slice steak.
  • Divide noodles and steak between plates. Top steak with any resting steak juices. 
  • Sprinkle remaining cilantro, remaining mint and remaining peanuts over top.
