Cooking Steps

Cook veggies

  • Before starting, wash and dry all produce.
  • Core, then cut pepper into 1/4-inch pieces. 
  • Using a strainer, rinse rice until water runs clear. 
  • Heat a large pot over medium-high. When hot, add 1 tbsp (2 tbsp) oil, then mirepoix and peppers. Cook for 2-3 min, unil softned. Season with salt and pepper.
 Cook beef

  • Add beef. Season with salt and pepper. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.** Carefully drain and discard excess fat. 
  • Add Mexican Seasoning and tomato sauce base. Cook for 30 sec, until fragrant. 
Cook rice

  • Add rice, corn, garlic puree, stock powder, 1/8 tsp (1/4 tsp) salt and 1 1/4 cup (2 1/2 cups) water. Bring to a boil over high.
  • Once boiling, reduce heat to low. Cover and cook for 12-15 min, until rice is tender and water is absorbed.
  • Remove from heat. Set aside, still covered.
Finish and serve

  • Meanwhile, thinly slice green onions. 
  • Once rice is tender, season with salt and pepper, then fluff with a fork.
  • Divide beef-and-rice mixture between bowls.
  • Sprinkle green onions and cheese over top.
  • Dollop with sour cream.
