Cooking Steps

  • Before starting, wash and dry all produce.
  • Peel, then halve shallot. Cut into 1/4-inch pieces. 
  • Rinse in cold water, then strain well. 
  • To a large bowl, add vinegar, 1/4 tsp sugar, 1/4 tsp Italian Seasoning and 1 tbsp oil. Season with salt and pepper, then whisk to combine. 
  • Add shallots. Toss to coat in dressing, then set aside.

  • Meanwhile, remove and discard outer layer of lettuce. Remove stem. Cut into 1-inch pieces.
  • Cut cucumber into 1/4-inch half moons. 
  • Halve tomatoes.

  • Add spring mix, lettuce, tomatoes, cucumbers and half the Parm to the bowl.  Toss to combine. 
  • Season with salt and pepper, to taste.

  • Divide salad between plates.
  • Sprinkle over croutons and remaining cheese.
