Cooking Steps

  • Cut bok choy into 1/2-inch pieces. Rinse bok choy leaves to wash away any dirt.
  • Cut green onion whites into 1-inch pieces.
  • Thinly slice remaining green onion.
  • Juice half the lime into a medium bowl, then cut remaining lime into wedges. 
  • Add half the sesame oil, hoisin sauce, peanut putter and 1/4 cup (1/2 cup) warm water. Season with salt and pepper, then whisk to combine. Set aside.

  • Heat a large non-stick pan over medium-high.
  • When hot, add 1 tbsp (2 tbsp) oil, then pork. Cook for 3-4 min, breaking up pork into smaller pieces, until no pink remains.** Season with salt and pepper.
  • Add Moo Shu Spice Blend and green onion whites. Cook for 1-2 min, stirring often, until fragrant and onions are tender-crisp. 
  • Transfer to a small bowl, then cover to keep warm.

  • Add remaining sesame oil to the same pan, then bok choy and carrots. Cook for 2-3 min, stirring occasionally, until tender-crisp. Season with salt and pepper.

  • Add chow mein noodles to the boiling water. Cook, uncovered, for 1-2 min, until tender.
  • Drain noodles, then return noodles, veggies and pork mixture to the same pot.
  • Pour over sauce. Cook 1 min, stirring constantly, until well combined. 
  • Take pot off heat.
  • Season with salt and pepper, to taste.

  • Divide peanutty pork noodles between bowls.
  • Sprinkle over remaining green onions.
  • Squeeze over lime, if desired.
