Strip 1 tbsp thyme leaves (dbl for 4 ppl) from the steams. Heat a large non-stick over medium-high heat. When hot, add 1/2 tbsp oil (dbl for 4 ppl) then the meatless farms, onions, garlic puree and thyme. Cook, breaking up Meatless Farms patties into smaller pieces, until browned, 4-5 min.** Season with salt and pepper.
On parchment-lined baking sheets unroll puff pastry. Spoon the filling, evenly, over the puff pastry. Carefully and tightly roll the pastry over the filling to create a log. (NOTE: Turn log until seam side is facing down.) Brush, 1/2 tbsp oil (dbl for 4 ppl) over the roll. Season with salt.
Bake, in the middle of the oven, until the puff pastry is golden-brown and cooked through, 20-22 min. (NOTE: For 4 ppl, use 2 baking sheets and bake in the middle and bottom of the oven, rotating sheets halfway through cooking, until cooked through, 20-22 min.)
While the meatless sausage rolls bake, slice cucumber into 1/4-inch rounds. Halve tomatoes. Whisk together vinegar, 2 tbsp oil, 1/4 tsp sugar (dbl for 4 ppl) in a large bowl. Add cucumbers and tomatoes, then toss to coat. Season with salt and pepper.
Stir together the mayo and Dijon in a small bowl. Set aside.
Cut the meatless sausage rolls into 6 pieces (12 for 4 ppl). Add the argula and baby spinach top the large bowl with the marinated veggies. Toss to combine. Divide the meatless sausage rolls and salad between plates. Serve the Dijonaisse on the side, for dipping.
