Before starting, wash and dry all produce. Heat a medium pot over medium heat. When hot, add 2 tbsp butter, and swirl to melt. Add remaining thyme, then sprinkle flour over top. Cook, whisking often, until flour is golden and fragrant, 2-3 min.
While whisking, gradually add reserved beef roasting juices, beef broth concentrates and 1 1/2 cups water. Bring to a simmer over medium heat and cook, whisking often, until gravy is slightly reduced, 2-3 min.
Season with salt and pepper. Transfer gravy to a gravy boat.
