Before starting, wash and dry all produce. Bring 2/3 cup water to a boil in a small pot or kettle. Add couscous and boiling water to a medium bowl. Season with salt and pepper, then stir to combine. Cover and let stand for 5 min.

Meanwhile, drain tuna.Cut cucumber into 1/4-inch slices.Cut tomato into 1/4-inch pieces.

Fluff couscous with a fork. Add pesto, tuna, cucumbers and tomatoes to couscous. Season with salt and pepper, then stir to combine.
