"Tacos Gobernador" or "Governor's Tacos" are a cross between a shrimp taco and a quesadilla. Filled with buttery shrimp and ooey gooey cheese, these tacos break all the rules with bold flavour.

- Core, then cut pepper into 1/2-inch pieces.
- Cut tomatoes into 1/2-inch pieces.
- Finely chop cilantro.
- Heat a large non-stick pan over medium-high heat.
- When hot, add 1/2 tbsp (1 tbsp) oil, then peppers, onions and tomatoes. Cook, stirring occasionally, until veggies begin to soften and tomatoes begin to break down, 1 min.
- Add shrimp, Tex-Mex paste and 1 tbsp (2 tbsp) water. Cook, stirring occasionally, until shrimp just turn pink and tomatoes have broken down, 2-3 min.**
- Remove from heat.
- Transfer filling to a medium bowl and carefully wipe the pan clean.

- Arrange tortillas on a clean surface.
- Divide cheese between tortillas, then top with shrimp and veggie filling. Fold tortillas in half to enclose filling.
- Heat the same pan (from step 2) over medium-high.
- When hot, add 3 tacos to the dry pan. Cook until golden-brown, 1-2 min per side.
- Reduce heat to medium and repeat with remaining tacos.
- Divide tacos between plates, then drizzle with salsa.
- Sprinkle cilantro over top.
