Preheat your oven to 425°F. Start prepping when your oven comes up to temperature!

Roast the mushrooms

Prep and roast the mushrooms: Wash and dry all produce. Strip the rosemary from the stems and finely chop ½ tsp (double for 4 people). Thinly slice the mushrooms, then toss them on a parchment-lined baking sheet with a drizzle of oil and rosemary. Arrange mushrooms in one layer, then sprinkle with breadcrumbs and Parmesan. Bake in the centre of oven, stirring halfway through, until crispy and golden-brown,12-15 min.

Make the dressing: Meanwhile, in a medium bowl, whisk the balsamic vinegar (DO: measure out) with 1 tsp fig jam (double for 4 people) and a drizzle of oil. Set aside.

Cut the brie into thin slices

Assemble the grilled cheese: Cut the brie into thin slices. Spread half the slices of bread each with as much fig jam as you like, then top with brie slices. Place another slice of bread on top. Spread the outer sides of the sandwiches with butter.

Cook the sandwiches

Heat a large non-stick pan over medium heat. Add the sandwiches and cook for 3-4 min per side until the outside is golden brown and the cheese melts.

Toss the arugula into the dressing

Finish and serve: Just before serving, toss the arugula into the dressing. Top with the crispy mushrooms. Slice the grilled cheese sandwiches in half and serve with the salad. Enjoy!
