- Preheat the oven to 425°F. Wash and dry all produce.
- Strip sage leaves from stems, then finely chop 1/2 tbsp.
- Cut sweet potatoes into 1/2-inch rounds. To a parchment-lined baking sheet, add potatoes, chopped sage and 1 tbsp oil. Season with 1 tsp garlic salt and pepper, then toss to coat.
- On another parchment-lined baking sheet, arrange bacon in a single layer.
- Roast sweet potatoes in the middle of the oven for 8-9 min, until soft on one side.
- Flip sweet potatoes. Drizzle with maple syrup. Return to the middle of the oven. Roast for 8-9 min, until sweet potatoes are tender and glazed.
- Meanwhile, roast bacon in the bottom of the oven for 14-18 min, until bacon is crisp and cooked through.**
- Transfer bacon to a paper towel-lined plate to cool.
- Meanwhile, thinly chop chives.
- Crumble or cut bacon into 1/4-inch pieces.
- Place sweet potatoes on a serving dish, overlapping slightly.
- Top with crumbled bacon.
- Dollop little spoonfuls of sour cream over the dish.
- Sprinkle with chives.
