  • Before starting, preheat the broiler to high.
  • Wash and dry all produce.
  • Have buns .Arrange buns on an unlined baking sheet, cut-sides up. Toast for 1-2 min, until browned. (TIP: Keep an eye on them so they don't burn!)
  • Once toasted, transfer to a plate. 
  • Add broccoli, 1 tbsp (2 tbsp) oil and 1 tsp (2 tsp) Lemon-Pepper Seasoning to the same baking sheet. Season with salt, then toss to coat. Broil for 6-8 min, fripping once halfway through cooking, until tender-crisp.

  • Meanwhile, roughly chop parsley.
  • Add parsley and mayo to a medium bowl. Season with salt, then stir to combine. Set aside.

  • Heat a large non-stick pan over high heat.
  • While pan heats, drain and rinse shrimp, then season with salt and 1/2 tbsp (1 tbsp) Lemon-Pepper Seasoning. 
  • Add 1 tbsp (2 tbsp) oil to the hot pan, then shrimp.  Cook for 1-3 min, stirring occasionally, until shrimp just turn pink. **
  • Transfer shrimp to a plate.

  • Add shrimp to mayo mixture, then divide between buns. 
  • Divide shrimp rolls and broccoli between plates. 
  • Sprinkle crispy shallots over broccoli.
