- Cut sweet potatos into 1/2-inch pieces.
- Add sweet potato, 1/2 tbsp (! tbsp) oil to a parchment-lined baking sheet. Season with salt and pepper. Toss to coat. Roast in the middle of the oven, sitrring halfway until tender and golden-brownm 20-24 min.
- Cut one corner of walnut packaging. Using a roling pin or heavy bottomed pot, crush walnuts until _______ size.
- Add vinegar, half the cranberry spread and 1/2 tbsp (1 tbsp) to a large bowl. Season with salt and pepper. Stir to mix.
- Pat chicken dry with paper towel.
- Carefully slice into the centre of each chicken breast, parallel to the cutting board, leaving 1/2 inch intact on the other end. Open up chicken like a book. Season both sides with remaining Zesty Garlic Spice Blend, salt and pepper.
- Heat a large non-stick pan over med-high.
- When hot, add 1/2 tbsp (1 tbsp) oil, then chicken.Sear until golden-brown, 1-2 min per side. Transfer chicken to a parchment-lined baking sheet. Spoon remaining cranberry spread over top, then walnuts overtop, pressing gently to ahere. Roast in the top of the oven, until chicken is cooked through, 12-14 min/ ____-___ min(butterflied).**
- Thinly slice chicken?
- Add sweet potato and spring mix to bowl with dressing. Toss to coat.
- Divide chicken and salad between plates.
- Srinkle feta over salad.
