Cooking Steps

Roast potatoes

  • Before starting, preheat the oven to 450˚F. Wash and dry all produce.
  • Remove any brown spots from potatoes, then cut into 1/2-inch cubes.
  • To a parchment-lined baking sheet, add potatoes and 1/2 tbsp (1 tbsp) oil. Season with salt, pepper and half the Zesty Garlic Blend, then toss to coat.
  • Roast in the bottom of the oven for 22-25 min, flipping halfway through, until tender and golden.

Form Beyond Meat® meatballs

  • Meanwhile, line another baking sheet with parchment paper.
  • Finely chop parsley. 
  • In a large bowl, combine Beyond Meat® patties, half the feta, half the parsley, half the Smoked Paprika-Garlic Blend and half the panko (use all for 4 servings). Season with 1/4 tsp (1/2 tsp) salt and 1/4 tsp (1/2 tsp) pepper, then combine. 
  • Roll mixture into 12 (24) equal-sized meatballs.
Roast Beyond Meat® meatballs

  • Arrange meatballs on the prepared baking sheet.
  • Bake in the middle of the oven for 12-14 min, until golden and cooked through.**
  • When meatballs are done, in a large bowl, toss together meatballs and chipotle sauce.

  • Peel, then cut onion into 1/4-inch pieces.
  • Halve zucchini lengthwise, then cut into 1/2-inch half-moons.
Cook succotash

  • Heat a large non-stick pan over medium-high. 
  • When the pan is hot, add 1/2 tbsp (1 tbsp) oil, then edamame, onion and half the corn (use all for 4 servings). Cook for 2 min, stirring often, until starting to brown.
  • Add zucchini and 1/2 cup (1 cup) water. Season with salt, pepper, remaining Zesty Garlic Blend and remaining Smoked Paprika-Garlic Blend. Cook for 3-4 min, stirring often, until water evaporates and veggies are tender-crisp.
  • Remove from heat.
Finish and serve

  • Once the potatoes have finished roasting, transfer potatoes to the pan with veggies, then stir to combine.
  • Divide potato succotash between plates. Top with Beyond Meat® meatballs.
  • Sprinkle remaining feta and remaining parsley over top.
