Cooking Steps

Start soup
1
  • Heat a large pot over medium-high heat.
  • When the pot is hot, add 1 tbsp (2 tbsp) oil, then sausage, mirepoix and couscous. Cook, breaking up sausage into smaller pieces, until it begins to brown, 2 min.** Season with Zesty Garlic Blend and pepper.
  • Add crushed tomatoes, stock powder, pesto, half the Parmesan and 3 cups (6 cups) water. (TIP: Scrape up the brown bits from the bottom of the pot - this will add extra flavour!). Cover and bring to a boil over high.
Prep
2
  • Meanwhile, roughly chop spinach.
Simmer soup
3
  • Once boiling, reduce heat to medium. Cook uncovered, stirring occasionally, until couscous is tender and sausage is cooked through, 8-10 min.**
  • Remove from heat, then stir in spinach. Season with pepper. Cook, stirring often, until spinach wilts, 30 sec.

Finish and serve
4
  • Divide soup between bowls.
  • Sprinkle remaining Parmesan over top.

Customer reviews

Review summary

Updated on Feb 2026
  • Flavor: Many loved the rich, comforting taste; some found it a bit bland and suggested adding chili flakes or lime juice for extra zing.
  • Ease of prep: Praised as quick, simple, and perfect for busy weeknights, though a few noted the couscous needed longer to soften than stated.
  • Suggestions: Consider adding extra vegetables like corn or zucchini; some reduced couscous for a thinner consistency or added cream for richness.
  • Leftovers: Makes great leftovers and freezes well; several noted it yielded enough for multiple meals.
  • Texture: Some found it more like a hearty stew than a soup; adding fried onions could provide a nice crunch.
