Cooking Steps

Roast sweet potatoes

  • Before starting, preheat the oven to 450˚F. Wash and dry all produce.
  • Cut sweet potatoes into 1/2-inch-thick wedges. To a parchment-lined baking sheet, add sweet potatoes and 1 tbsp oil. (NOTE: For 4 servings, use 2 baking sheets, with 1 tbsp oil per sheet.) Season with half the garlic salt and pepper, then toss to coat.
  • Roast in the middle of the oven for 23-25 min, flipping halfway through, until tender and golden. (NOTE: For 4 servings, roast in the middle and top of the oven, rotating sheets halfway through.)
Cook bacon

  • Meanwhile, pat bacon dry with paper towels.
  • On another parchment-lined baking sheet, arrange bacon in a single layer. 
  • Roast in the bottom of the oven for 5-6 min, until edges start to crisp.
  • Remove bacon from the oven, then carefully drain and discard fat.
  • To a large bowl, add 1/2 tbsp (1 tbsp) maple syrup. Set aside.
  •  Drizzle remaining maple syrup over top of bacon, then sprinkle with 2 tsp (4 tsp) sugar.
  • Return bacon to the bottom of the oven for 5-7 min, until golden.**
Cook patties

  • Meanwhile, to a medium bowl, add bison, remaining garlic salt, panko and half the Dijon. Season with pepper, then combine. 
  • Form mixture into 2 (4) 4-inch-wide patties. 
  • Heat a large non-stick pan over medium. When the pan is hot, add patties to the dry pan.
  •  Pan-fry for 4-5 min per side, until cooked through.**
  • Transfer patties to a plate, then cover to keep warm.
Make Dijon-mayo and vinaigrette

  • Meanwhile, to a small bowl, add mayo and remaining Dijon. Season with salt and pepper, then stir to combine. 
  • To the bowl with the maple syrup (from step 2), add vinegar and 1 1/2 tbsp (3 tbsp) oil. Season with salt and pepper, then whisk to combine. 
Toast buns

  • Halve buns.
  • When bacon is done, transfer to a paper towel-lined plate. Remove the parchment paper from the baking sheet, then carefully wipe the baking sheet clean.
  • Arrange buns on the baking sheet, cut-side up. Sprinkle cheese over top buns.
  • Toast buns in the bottom of the oven for 3-4 min, until cheese melts. (TIP: Keep an eye on them so they don't burn!)
Finish and serve

  • Add spring mix to the bowl with vinaigrette, then toss to combine.
  • Stack bacon, patties and some salad on bottom buns. Close with top buns.
  • Divide burgers, sweet potato wedges and remaining salad between plates.
  • Serve Dijon-mayo alongside for dipping.
