Cooking Steps

Prep and Roast Potatoes

Preheat the oven to 450°F. Wash and dry all produce. Start the recipe when the oven is ready. Cut potatoes into 1-inch pieces. To a parchment-lined baking sheet, add potatoes, Montreal Spice Blend and 1 tbsp (2 tbsp) oil. Season with salt and pepper, then toss to coat. Roast on the middle rack of the oven for 24-28 min, stirring halfway through, until tender and golden-brown.

Meanwhile, cut broccoli into 1-inch pieces. Mince or grate garlic. Strip rosemary leaves off stems. Finely chop. Strip thyme leaves off stems. Finely chop. Pat pork dry with paper towels. To a medium bowl, add pork. Season with salt and pepper, then coat in mustard. Sprinkle with herbs, then roll to coat tenderloin evenly. (TIP: Alternatively, sprinkle herbs onto a plate and roll roast over top.)

Roast Broccoli

To one side of another parchment-lined baking sheet, add broccoli and 1 tbsp (2 tbsp) oil. Season with salt and pepper, then toss to combine. Roast on the top rack of the oven for 10 min.

Cook Steaks

Meanwhile, in a large non-stick pan, heat 1 tbsp (2 tbsp) oil over medium-high heat. When the pan is hot, add steaks. Pan-fry steaks for 1-2 min per side, until golden-brown. After broccoli has roasted for 10 min, remove from the oven, stir, then sprinkle with cheese and crispy shallots. Transfer steaks to the other side of the baking sheet with broccoli .Roast steaks and broccoli for 4-6 min, and until cheese is melted and steaks are cooked to desired doneness.

Make Gravy

While steaks and broccoli roast, in the same pan, melt 2 tbsp (4 tbsp) butter over medium. When butter is melted, add garlic and Gravy Spice Blend. Cook for 1 min, stirring frequently, until fragrant. Add 1 1/4 cups (2 1/2 cups) water and soy sauce. Season with pepper and whisk to combine. Cook for 4-5 min, stirring occasionally, until thickened.

Finish & Serve

Thinly slice steaks. Divide potatoes, steak and broccoli amongst plates. Top steaks and potatoes with gravy. Enjoy!
