- Strip 2 tsp thyme leaves from stems, then roughly chop.
- Core, then cut apple into 1/2-inch pieces.
- Cut pineapple into 1/2-inch pieces.
- Halve grapes
- Zest, then juice lime.
- Place strawberry jam packet under warm running water to soften for 30 sec.
- Whisk together strawberry jam, 2 tsp lime juice and 1/2 tsp lime zest in a large bowl.
- Add pineapple, grapes and apple, then toss to coat.
- Place bowl in the fridge to marinate.
- Add pork, thyme, maple syrup and 1/4 tsp salt to a medium bowl. Season with pepper, then combine.
- Form mixture into two 4-inch-wide patties.
- Heat a large non-stick pan over medium heat.
- When hot, add 1/2 tbsp oil and patties to the pan. Pan-fry on one side for 4-5 min, then flip and reduce heat to medium-low. Pan-fry until cooked through, 5-6 min.**
- Sprinkle half the cheese evenly over patties, then cover with a lid until cheese melts, 1 min.
- Transfer to a plate and cover to keep warm.
- Carefully wipe the pan clean, then reheat over medium.
- When hot, add 1/2 tbsp oil and crack in eggs. Season with salt and pepper. Cover and pan-fry until egg whites are opaque, 2-3 min.**
- Meanwhile, halve buns, then arrange on an unlined baking sheet, cut-side up. Sprinkle remaining cheese over top buns.
- Broil in the top of the oven until cheese melts, 1-2 min. (TIP: Keep an eye on buns so they don't burn!)
- Stack patties, eggs and arugula and spinach mix on bottom buns. Close with top buns.
- Serve fruit salad on the side.
