Instructions

  • Peel, then mince or grate garlic.
  • Finely chop parsley.
  • Halve zucchini lengthwise, then cut into half moons.
  • Core, then cut pepper into 1/2 inch pieces.
  • Zest, then juice half a lemon. Cut remaining lemon into wedges.

  • To the boiling water, add orzo. Cook for 8-10 min, stirring occasionally, until tender but still firm to the bite.
  • Strain orzo, reserving 1/2 cup (1 cup) of pasta water, then return to the pot, off heat.

  • Meanwhile, drain and rinse shrimp, then pat dry with paper towels. Season with salt, pepper and half the Mediterranean Spice Blend.
  •  Heat a large non-stick pan, over medium-high. When the pan is hot, add 1 tbsp (2 tbsp) oil and shrimp. 
  • Cook for 2-3 min, stirring occasionally, until shrimp just turn pink.**
  • Trasfer to a plate.

  • To the same pan, add 1 tbsp (2 tbsp) oil, peppers, zucchini and remaining and Mediterranean Spice Blend.
  • Cook on medium-high for 3-4 min, stirring often, until tender crisp. 
  • Add in garlic, tomato sauce base, reserved cooking water and 1/2 tsp (1 tsp) sugar. 
  • Bring to a boil and simmer for 3-4 min, until sauce thickens. 
  • Stir in shrimp.

  • Meanwhile, to a small bowl, add yogurt sauce, 1 tsp lemon zest and 1/2 tbsp (1 tbsp) lemon juice. Season with pepper, then stir to combine.

  • To the pot with the orzo, stir in 1 tbsp (2 tbsp) butter and any remaining lemon juice.Season with salt and pepper.
  • Divide orzo between bowls, top with shrimp, veggies and sauce.
  • Dollop with lemon-yogurt sauce.
  • Sprinkle with parsley and squeeze a lime wedge over top, if desired.
