This spaghetti in red sauce is built on the smoky flavour of bacon! Mirepoix, mushrooms, garlic and red pepper pesto all make this sauce a flavour bomb in a short amount of time!

Cooking Steps

Cook spaghetti

  • Before starting, bring a large pot of salted water to a boil (use same for 4 servings). 
  • Wash and dry all produce.
  • To the boiling water, add spaghetti. Cook for 12-13 min, until tender but still firm to the bite. Reserve 2 tbsp (4 tbsp) pasta water.
  • Strain spaghetti, then return to the pot, off heat.
Cook bacon

  • Meanwhile, heat a large non-stick pan over medium. 
  • When hot, add bacon. (NOTE: For 4 servings, cook bacon in batches.) Cook for 5-8 min, flipping occasionally, until crispy.** 
  • Remove the pan from heat. Using a slotted spoon, transfer bacon to a paper towel-lined cutting board. Set aside. 
  • Discard all but 1 tbsp (2 tbsp) bacon fat.

  • Meanwhile, slice mushrooms into 1/4-inch slices.
  • On a clean cutting board, cut bacon into 1/2-inch pieces.
Cook veggies

  • To the pan with reserved bacon fat, add mirepoix and mushrooms. Cook for 3-5 min, stirring occasionally, until beginning to soften. Season with salt and pepper. 
  • Add garlic puree. Cook for 1 min, stirring constantly, until fragrant. 
Make sauce

  • To the pan, add crushed tomatoes, reserved pasta water, pesto and 1/4 tsp (1/2 tsp) sugar.
  • Reduce heat to medium-low. Cook for 3-4 min, until slightly thickened. 
  • Season with salt and pepper, if you like.
Finish and serve

  • To the pot with spaghetti, add sauce, 1 tbsp (2 tbsp) butter and half the bacon, then stir to combine. 
  • Divide pasta between bowls. 
  • Top with remaining bacon, then sprinkle Parmesan over top.
