Smashed potatoes are great, but have you tried smashed broccoli? Now's your chance! This recipe comes together in half the time of its starchy counterpart and packs just as much flavour, thanks to the crispy panko topping and copious amounts of melted cheddar.

Cooking Steps

  • Before starting, preheat the oven to 450F.
  • Bring a large pot of salted water to a boil. Start the recipe when the water is boiling.
  • Cut broccoli into bite-sized pieces.
  • Add broccoli to the boiling water and cook 1-2 min, until bright green.
  • Drain broccoli, then transfer to a large parchment-lined baking sheet.
  • Drizzle with 1 1/2 tbsp oil. Season with 1/2 tsp garlic salt, then toss to coat. Arrange broccoli in an even layer.
Make panko topping and smash broccoli

  • To a medium bowl, add 2 1/2 tbsp butter, then microwave until melted. Add panko breadcrumbs, 1/4 tsp garlic salt and 1/4 tsp pepper, then stir to combine.
  • Using the bottom of a glass, crush each broccoli piece until flattened. 
  • Sprinkle panko mixture and cheese over top.
  • Bake in the middle of the oven for 15-20 min, until broccoli is crispy and cheese has melted.
Finish and serve

  • Meanwhile, cut lemon into wedges.
  • Remove baking sheet from the oven, then break cheesy broccoli into bite-sized pieces. Transfer to a serving plate.
  • Squeeze a lemon wedge over top.
