Stretch dough

Before starting, preheat the oven to 400°F. Take pizza dough out of fridge to come to room temperature, about 30 mins before starting. Wash and dry all produce.

Prepare a well-floured baking sheet. (NOTE: Use two baking sheets for 4 ppl.) With floured hands, divide dough into 2 equal balls (4 balls for 4 ppl). Stretch each dough ball into a 5x8-inch round or oval shape. Set aside to rest on the baking sheet.

While the dough rests, core, then thinly slice the pepper. Peel, then mince the garlic. Slice the mushrooms.

Heat a large non-stick pan over medium-high heat. When hot, add 1/2 tbsp oil (dbl for 4 ppl), then beef, Italian Seasoning and half the garlic. Cook, breaking up beef into smaller pieces, until no pink remains, 4-6 min.** Season with salt and pepper. Transfer beef to a plate. Add another 1/2 tbsp oil (dbl for 4 ppl) to the pan, then mushrooms and peppers. Cook, stirring often, until veggies soften, 3-4 min.

Re-stretch dough into large ovals. Spoon marinara sauce over half of each piece of dough. Top with beef and veggies. Sprinkle mozzarella cheese over filling. Fold and crimp edges to seal the calzones. Brush 1 tsp oil over each calzone, then make one small slit on the top of each calzone. Bake in the middle of the oven, until golden-brown and cooked through, 16-18 min. (NOTE: For 4 ppl, bake in the middle and the top of the oven, rotating sheets halfway through cooking.)

While the calzones bake, stir together mayo, sour cream and 1/8 tsp garlic (dbl for 4 ppl) in a small bowl. Season with salt and pepper.

Allow the calzones to cool slightly before serving, 3-4 min. Serve with garlic dip on the side.
