Preheat your broiler to high (to broil 5 Layer Dip). Start preparing the recipe when the oven is ready.
Wash and dry all produce.* Peel, then cut sweet potatoes into 3/4-inch pieces. In a medium pot, combine sweet potatoes with 6 cups water and 2 tsp salt. (NOTE: Use same size pot, water and salt amount for 4 ppl.) Cover and bring to a boil over high heat. Cook, until fork-tender, 12-15 min. Meanwhile, peel, then mince or grate garlic. Cut tomato into 1/4-inch pieces. Thinly slice green onion. Zest, then juice half the lime. Cut remaining lime into wedges. Peel, then cut shallot into 1/4-inch pieces. Drain and rinse beans.

Heat a large non-stick pan over medium-high heat. When the pan is hot, add 1 tbsp oil (dbl for 4 ppl), then shallots and garlic. Cook, stirring often, until shallots soften, 1-2 min. Add turkey and half the Mexican seasoning. Cook, breaking up turkey into smaller pieces, until no pink remains, 4-5 min. (TIP: Cook to a min. internal temp. of 74°C/165°F.**) Transfer to a plate and set aside.

To the same pan, add beans, half the lime zest and 1/4 cup water (dbl for 4 ppl). Cook, stirring occasionally, until beans soften and most liquid is absorbed, 2-3 min. Season with salt and pepper. Remove pan from heat. Using a potato masher, lightly mash beans in the pan.

When potatoes are fork-tender, drain and return to the same pot. Using a potato masher, mash in 2 tbsp butter (dbl for 4 ppl) and remaining Mexican seasoning, until smooth. Season with salt and pepper. In an 8x8'' baking dish (9x13'' for 4 ppl) spread potatoes. Spoon over beans, then turkey and tomatoes.

Sprinkle over cheese. Broil in middle of oven, until cheese is melted and slightly crispy, 5-6 min. (TIP: Keep your eye on it so it doesn't burn!) Meanwhile, in a small bowl stir together sour cream, lime juice, remaining lime zest and 1/2 tsp sugar (dbl for 4 ppl). Season with salt and pepper.

Divide 5 Layer Dip between plates. Dollop over crema and sprinkle over green onions. Squeeze over a lime wedge, if desired. Scoop dip with tortilla chips.
