Cut potatoes into 1/2-inch pieces.
To an unlined baking sheet, add potatoes and zesty garlic blend. Season with salt and pepper. Toss to coat.
Roast in the middle of the oven for 22-25 min, stirring halfway until golden and tender. ** NOTE FOR 4 P?**

While potatoes roast, peel then cut onion into 1/4-inch pieces.
Thinly slice chives.
On a clean cutting board, cut bacon into 1/2-inch pieces.

Heat a large non-stick pan over medium.
When hot, add bacon. Cook for 5-8 min, stirring occasionally, until crispy.**
Remove the pan from heat. Using a slotted spoon, transfer bacon to a paper towel-lined cutting board. Set aside.
Discard all but 1 tbsp bacon fat.

Reheat pan over medium heat.
Add sausage and onions.
Cook for 4-5 min, breaking up sauage into smaller pieces, until no pink remains.**
Sprinkle Cream Sauce Spice Blend over top. Stir to coat.
Add soy sauce, mustard, cream and 3/4 cup (1 1/2 cups) water.
Cook for 1-2 min, stirring often until gravy thickens slightly.

Divide potatoes between plates.
Top with sausage gravy.
Sprinkle cheese, bacon and chives overtop.
