Cooking Steps

Peel, then mince the shallot. Peel, then mince the garlic. Cut the broccoli into bite size pieces.

Add beef, garlic, shallot, breadcrumbs and half the bbq sauce to a large bowl. Using your hands, combine the mixture. Form the meat mixture into a 1-inch thick square on a parchment-lined baking sheet. (NOTE: for 4ppl make two meat squares)

Add the mozzarella and Parmesan cheese down one side of the meat loaf. Fold the meat over the cheese and pinch the sides closed. (NOTE: You should have 2-inch thick meatloaf.) Bake in the middle of the oven, until cooked through, 18-22 min.**

While the meatloaf roast, peel, then cut potatoes into 1/2-inch pieces. Combine potatoes, 2 tsp salt and enough water to cover (approx. 1 inch) in a large pot (NOTE: Use same for 4 ppl). Cover and bring to a boil over high heat. Once boiling, reduce heat to medium. Simmer, uncovered, until fork-tender, 10-12 min.

While the potatoes boil, toss the broccoli with 1 tbsp oil (dbl for 4ppl) on a baking sheet. Season with salt and pepper. Roast in the top of the oven, until broccoli is golden-brown and tender, 8-10 min.

When potatoes are done, drain and return them to the same pot, off heat. Mash in 2 tbsp butter and 1/4 cup milk (dbl both for 4 ppl) until smooth. Season with salt and pepper. Slice meatloaf. Divide mash, broccoli and meatloaf between plates. Sprinkle with the crispy onions. Serve the remaining BBQ sauce on the side.
