Cooking Steps

  • Before starting wash and dry all produce. 
  • Lightly oil the grill. While you prep, preheat the grill to medium (approx. 400°F).
  • To a medium pot, add 1 1/4 cups (2 1/2 cups) water, 1 tbsp (2 tbsp) butter and 1/8 tsp (1/4 tsp) salt. Cover and bring to a boil over high. 
  • Using a strainer, rinse rice until water runs clear.
  • To the boiling water, stir in rice and half the Italian Herb Spice Blend. Reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed. Remove from heat. Set aside, still covered.

  • Meanwhile, zest, then juice lemon. 
  • Cut tomatoe(s) into 1/4-inch pieces.
  • Snip one corner of crouton pack. Using a pot or rolling pin, crush croutons into pea-sized crumbs.
  • To a medium bowl, add mayo, caesar dressing, parmesan, and lemon juice. Season with salt and pepper, stir to combine.
  • To a large bowl, add 2 tbsp (1/4 cup) dressing, tomatoes and spring mix. Do not mix until step 5!

  • Pat chicken dry with paper towels. Season with salt, pepper and remaining Italian herb Spice Blend.
  • Drizzle 1 tsp (2 tsp) oil overtop. Flip to coat.
  • Add chicken to the grill. Reduce heat to medium, close lid and grill for 6-8 min per side until chicken is cooked through.**

  • When the chicken is done, spread remaining Caesar dressing overtop. Sprinkle cheddar cheese overtop. Close lid and grill for 1-3 min, until cheese melts. 
  • Lightly press crouton topping on the tops of chicken, then let rest for 2 min.

  • Fluff rice with fork, stir in lemon zest. 
  • Toss salad.
  • Divide rice, salad and chicken between plates.
