Cooking Steps

Prep and roast potato wedges

  • Before starting, preheat the oven to 450°F.
  • Wash and dry all produce.
  • Remove any brown spots from potatoes and cut into 1/2-inch wedges.
  • To an unlined baking sheet, add potatoes, half the Zesty Garlic Blend and 1 tbsp oil. (NOTE: For 4 servings, use 2 baking sheets, with 1 tbsp oil per sheet.) Season with salt and pepper, then toss to coat.
  • Roast in the middle of the oven for 24-28 min, flipping halfway through, until tender and golden. (NOTE: For 4 servings, roast in the top and middle of the oven, rotating sheets halfway through.)
Form patties

  • To a large bowl, add beef, breadcrumbs, half the Dill-Garlic Spice Blend, remaining Zesty Garlic Blend and 1/4 tsp (1/2 tsp) salt. Season with pepper, then combine.
  • Form mixture into 4 (8) 5-inch-wide patties. Using your thumb, gently press a thumbprint into each patty (don't press all the way through!).
Sear patties

  • Meanwhile, heat a large non-stick pan over medium-high.
  • When hot, add patties to the dry pan. (NOTE: Don't crowd the pan; cook patties in 2 batches if needed.) Pan-fry for 1-2 min per side, until browned.
  • Line a baking sheet with parchment paper.
  • Transfer patties to the prepared baking sheet. Rinse and carefully wipe pan clean.
  • Spread 1/2 tbsp BBQ sauce over each patty. Roast in the bottom of the oven for 6-9 min, until cooked through.** 
Cook bacon and finish prep

  • Reheat the same pan over medium. When hot, add bacon. Cook for 5-8 min, flipping occasionally, until crispy.**
  • While bacon cooks, thinly slice tomatoes.
  • Thinly slice chives.
  • To a medium bowl, add sour cream, cream cheese, chives, remaining Dill-Garlic Spice Blend and 1 tbsp (2 tbsp) water. Season with salt and pepper. Stir to mix. (This is your ranch sauce!)
  • Remove the pan from heat. Using tongs, transfer bacon to a paper towel-lined cutting board. Set aside. Discard all but 1 tbsp (2 tbsp) bacon fat.
Pan toast buns

  • Halve buns.
  • Reheat the pan with bacon fat over medium.
  • Place buns in pan, cut-sides down. Place a clean pot over buns and gently press down on buns for even toasting. (NOTE: For 4 servings, toast buns in batches, using 1 tbsp reserved bacon fat per batch.)
  • Toast buns for 3-4 min, until golden. (TIP: Keep an eye on them so they don't burn!)
Finish and serve

  • Spread some ranch sauce over top and bottom buns.
  • Stack patties, bacon, tomatoes and spring mix on bottom buns and sandwich with top buns.
  • Divide burgers and wedges between plates.
  • Serve remaining BBQ sauce and remaining ranch sauce alongside for dipping.
