Our creation for dinner tonight is the Retro Burger. Caramelized onions, cheddar cheese, flavourful buns and perfectly packed patties. Enjoy each bite of this burger on a crisp winter night!

Cooking Steps

1 ROAST SWEET POTATOES

Wash and dry all produce.* On a baking sheet, toss sweet potatoes with 1 tbsp oil (dbl for 4 ppl). Season with salt and pepper. Roast in middle of the oven, turning sweet potatoes over halfway through cooking, until golden-brown, 20-24 min. (NOTE: For 4 ppl, use 2 baking sheets.)

Meanwhile, heat a large non-stick pan over medium heat. When pan is hot, add 1 tbsp oil (dbl for 4 ppl), then onions. Cook, stirring occasionally, until slightly softened, 3-4 min. Add 1 tsp sugar and season with salt. Cook, stirring occasionally, until onions are dark golden-brown, 5-6 min.

Meanwhile, peel, then grate garlic. Peel, then grate shallot(s). In a medium bowl, combine beef, garlic, shallot, 1/2 tbsp cornstarch (dbl for 4 ppl), 1 tbsp mustard (dbl for 4 ppl) and 1/2 tsp salt (dbl for 4 ppl). Season with pepper. Form mixture into two 4-inch wide patties. (NOTE: 4 patties for 4 ppl.) Lightly press a thumb print into each patty. (NOTE: Don't push all the way through!)

When onions are done, remove pan from heat and stir in 1 tbsp vinegar (dbl for 4 ppl) until absorbed, 1 min. Transfer onions to a small bowl. Carefully wipe pan clean. Heat same pan over medium-high heat. When pan is hot, add 1/2 tbsp oil, then burgers. Pan-fry until cooked through, 4-5 min per side. (TIP: Cook to a min. internal temp. of 71°C/160°F.**)

5 TOAST BUNS

Meanwhile, split buns in half and arrange them on another baking sheet, cut-side up. Sprinkle cheese over bottom buns. Toast in top of the oven, until cheese melts and top buns are golden, 4-5 min. (TIP: Keep an eye on your buns so that they do not burn!) (NOTE: For 4 ppl, use one of the same baking sheets from the sweet potatoes.)

6 FINISH AND SERVE

In another small bowl, stir together mayo and remaining mustard. Spread mayo-mustard on toasted top buns. Divide burgers between buns. Top with caramelized onions. Serve with sweet potatoes.
