Quick Irish-Style Turkey Stew

with Garlic Crostini

In this hearty twist on classic potato-and-beef stew, we've swapped in quick-cooking ground turkey so your meal will be on the table in less than 40 minutes. Don't forget to wipe the bowl clean with a piece of garlic crostini!

Cooking Steps

Roast potatoes

  • Before starting, preheat the oven to 450°F. 
  • Wash and dry all produce.
  • Remove any brown spots from potatoes and cut into quarters.
  • To a parchment-lined baking sheet, add potatoes and 1 tbsp (2 tbsp) oil. Season with half the garlic salt and pepper, then toss to coat. 
  • Roast in the middle of the oven for 25-28 min, until tender and golden.
Prep and cook turkey

  • Meanwhile, strip 1 tbsp (2 tbsp) thyme leaves from stems. 
  • Roughly chop parsley. 
  • Peel, then mince or grate garlic. 
  • Heat a large pot over medium-high. 
  • When hot, add 1 tbsp (2 tbsp) oil, then turkey. Cook for 4-5 min, breaking up beef into smaller pieces, until no pink remains.** 
  • Season with salt and pepper. Using a slotted spoon, transfer turkey to a large bowl. 
Cook mirepoix

  • Reduce heat to medium, then, to the same pot, add 1 tbsp (2 tbsp) butter, mirepoix, thyme, remaining garlic salt and half the garlic.
  • Cook for 3-4 min, stirring occasionally, until mirepoix softens slightly.
  • Add turkey and any juices from the bowl.
  • Sprinkle Gravy Spice Blend over top.
  • Cook for 1-2 min, stirring often, until veggies and turkey are coated.
Cook stew

  • To the pot, add broth concentrate, soy sauce, peas and 1 1/2 cups (3 cups) water.
  • Season with salt and pepper, then stir to combine. Bring to a boil over high.
  • Once boiling, reduce heat to medium-low.
  • Cook for 10-12 min, stirring occasionally, until stew thickens slightly and veggies are tender. (TIP: If you prefer a looser stew, add an additional 1/4 cup of water at a time, until you reach the desired consistency.)
Make garlic crostini

  • Meanwhile, in a small bowl, combine remaining garlic and 1 tbsp (2 tbsp) oil.
  • Halve buns. On an unlined baking sheet, arrange buns, cut-side up.
  • Brush with garlic oil.
  • Toast in the top of the oven for 5-6 min, until lightly golden. (TIP: Keep an eye on them so they don't burn.)
Finish and serve

  • To the stew, add roasted potatoes, then stir to combine.
  • Divide Irish-style stew between bowls.
  • Serve garlic crostini alongside.
  • Sprinkle parsley over stew and crostini.

If you've opted to get turkey, add 1 tbsp (2 tbsp) oil to the pan, then add turkey. Cook turkey in the same way the recipe instructs you to cook the beef.** [Disregard instructions to drain excess fat.]
