Cooking Steps

  • Before starting, preheat the broiler to high.
    Wash and dry all produce.
  • Halve cucumber lengwise, slice into half moons.
  • Cut tomato into 1/2-inch pieces.
  • Cut mushrooms into 1/2 inch slices.
  • Peel, then cut onion into 1/2-inch slices.
  • Cut the corner of the shaved beef packaging, gently squeez, letting the juices drain.

  • Heat a large non-stick pan over medium.
    When hot, add 1/2 tbsp (1 tbsp) oil and onions. Cook for 3-4 min, stirring occasionally, until onions soften slightly.
    Add 1 tsp (2 tsp) sugar and 1/4 cup (1/2 cup) water and season with salt. Cook uncovered for 4-6 min, stirring occasionally, until dark golden. 
    Stir in half the balsamic vinegar and season with salt.
    Carefully rinse and wipe the pan clean.

  • To a large bowl, add shaved beef and Montreal Spice Blend. Mix thoroughly to coat.
  • Heat a large non-stick pan over medium-high. When hot, add 1/2 tbsp (1 tbsp) oil.
  • Add beef in a single layer. Sear 1-2 min per side, until beef is cooked through.**

  • To a small bowl, add mayo, and half the mustard. Season with salt and pepper. Stir to combine.
  • To a large bowl, add remaining balsamic vinegar, 1 tbsp (2 tbsp) oil, 1/4 (1/2 tbsp) sugar. Season with salt and pepper. Whisk to combine. 
  • Add tomato, and half the spring mix. Toss to combine.

  • On an unlined baking sheet, arrange buns, cut-sides up. Sprinkle cheese over top buns. Toast in the top of the oven for 3-4 min, until cheese melts. (TIP: Keep an eye on buns so they don't burn!).
  • To the bottom bun, spread 1 tbsp mustard-sauce, beef, caramelized onions, and remaining spring mix.

  • Divide beef melts and salad between plates.
