Cooking Steps

1 ROAST POTATOES
1

Wash and dry all produce.* Cut potatoes into 1/2-inch thick wedges. On a baking sheet, toss potatoes with 2 tbsp oil. Arrange in a single layer. Season with salt and pepper. Roast in the top of the oven, until potatoes are golden-brown, 25-28 min.

2 START CHICKEN
2

Meanwhile, pat chicken dry with paper towel. In a medium bowl, add chicken, BBQ seasoning and 1 tbsp oil. Stir to coat. Transfer chicken to a foil-lined baking sheet and roast in the middle of the oven, until chicken is almost cooked through, 14-16 min. (NOTE: The chicken finishes cooking in Step 4.)

3 CHAR CORN
3

Meanwhile, core, then cut bell pepper into 1/4-inch pieces. Heat a large non-stick pan over medium-high heat. When pan is hot, add corn, peppers, 2 tbsp oil and 1 tbsp water to the pan. Cover with a lid. Cook, carefully swirling pan often, until corn kernels are dark golden-brown, 4-6 min.

4 BROIL CHICKEN
4

When chicken is almost cooked through and potatoes are out of the oven, turn oven broiler to high. Broil chicken in the middle of oven, until cooked through and tops are golden, 4-5 min. (TIP: Cook to a min. internal temp. of 74°C/165°F, as size may vary.**)

5 MAKE RANCH DRESSING
5

Meanwhile, peel, then mince or grate garlic. Finely chop chives. In a small bowl, whisk together sour cream, mayo, half the chives, 1 tbsp vinegar, 1 tsp sugar and 1/4 tsp minced garlic. (NOTE: Reference garlic guide in Start Strong.) Season with salt and pepper. Set aside.

6 FINISH AND SERVE
6

Slice chicken. Divide chicken, corn mixture and potatoes between plates. Spoon ranch dressing over corn mixture and chicken. Sprinkle over remaining chives.
