Cooking Steps

  • Before starting, preheat the oven to 450˚F.
  • Wash and dry all produce.
  • Cut mushrooms into 1/4-inch slices.
  • Heat 1 tbsp (2 tbsp) oil in a large non-stick pan over medium-high.
    When hot, add mushrooms. Cook for 5-6 min, stirring occasionally, until softened.
  • Remove from heat, then season with salt and pepper.

  • Meanwhile, line a baking sheet with parchement paper. 
  • Arrange bacon on prepared baking sheet in a single layer. Brush tops with 1/2 tbsp (1 tbsp) maple, then season with pepper. 
  • Roast in the middle of the oven for 5-7 min, until bacon begins to crisp.
  • Flip bacon. Brush with 1/2 tbsp (1 tbsp) maple syrup and season with pepper. Roast for 5-7 min, until bacon is crisp and cooked through.** Transfer bacon to a paper towel-lined plate to cool.

  • Meanwhile, on another parchment-lined baking sheet, arrange flatbreads. (NOTE: For 4 servings, use 2 parchment-lined baking sheets.)
  • Toast flatbreads in the bottom of the oven for 2-3 min, until softened. (NOTE: For 4 servings, toast in the top and bottom of the oven, rotating sheets halfway through.)

  • Cut bacon into 1-inch pieces. 
  • Spread marinara sauce over toasted flatbreads.
  • Top with mushrooms, then sprinkle cheese and half the bacon over top.
  • Bake in the middle of the oven for 6-8 min, until cheese is melted and flatbreads are golden and crisp. (NOTE: For 4 servings, bake flatbreads in the top and middle of the oven, rotating sheets halfway through.)

  • Meanwhile, to a large bowl, add croutons and spring mix. Drizzle over Caesar dressing, then toss to combine. Season with salt and pepper, to taste.

  • Cut pizzas into quarters.
  • Divide pizza and salad between plates.
  • Top salad with reminaing bacon.
