Cooking Steps

Cook bacon

  • Before starting, preheat the oven to 450˚F.
  • Wash and dry all produce.
  • Heat a large non-stick pan over medium.
  • When hot, add bacon. (NOTE: For 4 servings, cook bacon in batches.) Cook for 5-8 min, flipping occasionally, until crispy.** 
  • Remove the pan from heat. Using tongs, transfer bacon to a paper towel-lined cutting board. Set aside. Discard all but 1 tbsp (2 tbsp) bacon fat.
Prep and cook veggies

  • Reheat the same pan with bacon fat over medium-high.
  • While the pan heats, cut mushrooms into 1/4-inch slices.
  • Core, then cut pepper into 1/4-inch slices.
  • When the pan is hot, add mushrooms and peppers. Cook for 5-6 min, stirring occasionally, until mushrooms are softened and peppers are tender-crisp.
  • Remove from heat, then season with salt and pepper. 
Toast flatbreads

  • Meanwhile, on a parchment-lined baking sheet, arrange flatbreads. (NOTE: For 4 servings, use 2 parchment-lined baking sheets.)
  • Toast flatbreads in the bottom of the oven for 2-3 min, until softened. (NOTE: For 4 servings, toast in the middle and bottom of the oven, rotating sheets halfway through.)
Bake flatbreads

  • Cut bacon into 1-inch pieces. 
  • Spread half the marinara sauce over flatbreads and sprinkle cheese over top. 
  • Top with mushroom-pepper mixture and half the bacon.
  • Bake assembled flatbreads in the middle of the oven for 7-8 min, until cheese is melted and flatbreads are browned and crisp. (NOTE: For 4 servings, bake flatbreads in the top and middle of the oven, rotating sheets halfway through.) (TIP: Keep your eye on them so they don't burn!)
Make salad

  • Meanwhile, to a large bowl, add croutons and spring mix. Drizzle with Caesar dressing, then season with salt and pepper. Toss to combine.
Finish and serve

  • Cut flatbreads into quarters.
  • Divide flatbreads and salad between plates.
  • Top salad with remaining bacon.
  • Serve remaining marinara sauce on the side.
