Cooking Steps

  • Before starting, preheat the oven to 450˚F.
  • Wash and dry all produce.
  • Heat a large non-stick pan over medium.
    When hot, add bacon. (NOTE: For 4 servings, cook bacon in batches.) Cook for 5-8 min, flipping occasionally, until crispy.**
    Remove the pan from heat. Using tongs, transfer bacon to a paper towel-lined cutting board. Set aside. Discard all but 1 tbsp (2 tbsp) bacon fat.

  • Meanwhile, heat the same large non-stick pan with bacon fat over medium-high.
  • Cut mushrooms into 1/4-inch slices.
  • Core, then cut pepper into 1/2-inch slices.
  • When hot, add mushrooms and peppers. Cook for 5-6 min, stirring occasionally, until mushrooms softened and peppers tender.
  • Remove from heat, season with salt and pepper.

  • Meanwhile, on another parchment-lined baking sheet, arrange flatbreads. (NOTE: For 4 servings, use 2 parchment-lined baking sheets.)
  • Toast flatbreads in the bottom of the oven for 2-3 min, until softened. (NOTE: For 4 servings, toast in the top and bottom of the oven, rotating sheets halfway through.)

  • Cut bacon into 1-inch pieces. 
  • Spread half the marinara sauce over flatbreads. 
  • Top with mushroom-pepper mix, then sprinkle cheese and half the bacon over top.
  • Bake in the middle of the oven for 7-8 min, until cheese is melted and flatbreads are browned and crisp. (NOTE: For 4 servings, bake flatbreads in the top and middle of the oven, rotating sheets halfway through.)
  • (TIP: Keep your eye on them so they don't burn!)

  • Meanwhile, to a large bowl, add croutons and spring mix. Drizzle over Caesar dressing, then toss to combine. Season with salt and pepper.

  • Cut pizzas into quarters.
  • Divide pizza and salad between plates.
  • Top salad with reminaing bacon.
  • Use remaining marinara as a dipper.
