Instructions

  • Add 10 cups hot water and 2 tsp salt to a large pot (use same for 4 ppl).
  • Cover and bring to a boil over high heat.
  • Add penne to the boiling water.
  • Cook uncovered, stirring occasionally, until tender, 10-12 min.
  • Reserve 1/4 cup pasta water (dbl for 4 ppl), then drain and return penne to the same pot, off heat.

  • Meanwhile, pat salmon dry with paper towels, then sprinkle over 1/2 tbsp Italian Spice Blend. Season with salt and pepper.
  • Arrange salmon on a parchment-lined baking sheet.
  • Roast in the middle of the oven until cooked through, 7-10 min.**
  • When salmon is done, remove and discard salmon skin. Using 2 forks, break salmon up into large flakes.

  • Meanwhile, peel, then cut half the onion into 1/2-inch pieces (use whole onion for 4 ppl).
  • Peel, then mince or grate garlic.
  • Cut zucchini into 1/2-inch pieces.

  • Heat a large non-stick pan over medium-high heat. When hot, add 1 tbsp butter (dbl for 4 ppl), then swirl to melt, 30 sec.
  • Add onions and zucchini. Cook, stirring occasionally, until tender-crisp, 3-4 min.
  • Add garlic. Cook, stirring often, until fragrant, 1 min.
  • Season with salt and pepper.

  • Add reserved pasta water and tomatoes to the pan. Reduce heat to medium.
  • Cook, stirring occasionally, until sauce thickens slightly, 4-5 min.
  • Season with salt and pepper. (TIP: Add 1/4 tsp sugar to sauce, if desired!)

  • Add tomato sauce and flaked salmon to the pot with penne.
  • Stir gently to combine.
  • Divide pasta between bowls.
  • Sprinkle Parmesan over top.
  • Sprinkle over chili flakes, if desired.
