Cooking Steps

Cook pasta

  • Before starting, to a large pot, add 10 cups water and 2 tsp salt (use same for 4 servings). Cover and bring to a boil over high heat. Wash and dry all produce. 
  • Add penne to the boiling water. Cook uncovered for 10-12 min, stirring occasionally, until tender. 
  • Drain and return penne to the same pot, off heat.
Cook plant-based protein shreds

  • Meanwhile, heat a large non-stick pan over high.
  • Core, then cut pepper into 1/2-inch pieces.
  • When hot, add 1 tbsp (2 tbsp) oil, then protein shreds and peppers. Cook for 6-8 min, tossing occasionally, until protein shreds are cooked through and peppers are tender-crisp.**
  • Season with 1/4 tsp (1/2 tsp) garlic salt and pepper.
Make sauce

  • Reduce heat to medium-high.
  • Add Smoked Paprika-Garlic Blend to the pan. Cook for 1 min, stirring constantly, until fragrant.
  • Add cream cheese and 1/2 cup (1 cup) water.
  • Cook for 1-2 min, stirring often, until cheese is melted and sauce has thickened slightly.
  • Meanwhile, roughly chop or tear spinach.
Assemble pasta

  • To the pot with penne, add roasted pepper pesto, garlic puree, spinach and protein shred mixture. Stir for 1-2 min, until spinach wilts and pesto is combined into sauce.
  • Season with 1/4 tsp (1/2 tsp) garlic salt and pepper.
Finish and serve

  • Divide pasta between bowls.
  • Sprinkle feta over top.
