Prep and mix dip

Before starting, preheat the oven to 450ºF. Set cream cheese aside in a warm place to soften.Wash and dry all produce. Peel, then mince or grate garlic. Roughly chop parsley.Cut each flatbread into 6 wedges (24 wedges total). Roughly chop spinach.Heat a large non-stick pan over medium-high heat. When hot, add 1/2 tbsp oil, then spinach and half the garlic. Season with salt and pepper, then cook, stirring often until spinach is wilted and garlic is fragrant, 2-3 min. Transfer spinach to medium bowl and let cool.

Bake flatbread chips

Combine remaining garlic and 2 tbsp oil in a small bowl. Arrange flatbread wedges on a two large parchment-lined baking sheets. Brush garlic oil all over flatbread wedges, then season with salt and pepper. Bake in the top and middle of the oven until golden-brown and crisp, 5-6 min. (NOTE: Keep an eye on flatbread chips so they don't burn!)

Make spinach dip

Combine cream cheese, sour cream, mayo, half the cheese, half the parsley, 1/4 tsp salt and 1/4 tsp pepper together in another medium bowl. When spinach is cool, use paper towels to squeeze out any excess water.Add spinach to cream cheese mixture, then stir to combine.Transfer dip mixture to a baking dish, then sprinkle remaining cheese over top.

Finish and serve

Bake dip in the middle of the oven until warmed through, 5-6 min. Sprinkle remaining parsley over dip. Serve garlicky flatbread chips on the side for dipping.
