Cooking Steps

Roast Potato Bites

Preheat the oven to 450°F. Wash and dry all produce. Start the recipe when the oven is ready. Halve potatoes (quarter if larger). To a parchment-lined baking sheet, add potatoes and 1 tbsp (2 tbsp) oil. Season with salt and pepper, then toss to coat. Roast on the middle rack of the oven for 24-28 min, stirring halfway through, until tender and golden-brown.

Meanwhile, peel onion. Using a box grater, coarsely grate half the onion. Cut remaining onion into 1/4-inch pieces. Cut tomato into 1/4-inch pieces. Peel, then mince or grate garlic. In a small microwave-safe bowl, heat 2 tbsp (4 tbsp) butter on high for 30 sec-1 min, until melted. Set aside.

In a medium bowl, combine turkey, grated onion, panko, Chili-Cumin Spice Blend and 1/2 tsp (1 tsp) salt. Form mixture into two 4-inch-wide patties (4 patties for 4 portions). Lightly press a thumb print halfway into each patty. (NOTE: Don't push all the way through.) In a large non-stick pan, heat 1 tbsp (2 tbsp) oil over medium-high heat. When the pan is hot, add patties. Cook for 4-5 min per side, reducing heat if needed, until cooked through.

Make Fresh Salsa & Garlic Mayo

Meanwhile, to another medium bowl, add tomatoes, diced onions, 1 tsp (2 tsp) sugar and 1 tbsp (2 tbsp) oil. Season with salt and pepper, then toss to combine. In another small bowl, combine mayo and garlic.

Toast Buns & Serve

Halve buns. Brush melted butter evenly over cut sides of buns. On an unlined baking sheet, arrange buns, cut-side up. Toast on the upper rack of the oven for 2-3 min, until golden. (TIP: Keep an eye on buns so they don't burn!) Spread garlic mayo over bottom buns, then stack with spinach, patties and some fresh salsa. Close with top buns. Divide burgers and potato bites between plates. Spoon any remaining salsa over potatoes. Enjoy!
