  • Before starting, preheat the oven to 450˚F.
  • Wash and dry all produce.
  • Zest, then juice half the lemon. Cut the remaining lemon into wedges.
  • Halve tomatoes. Season with salt and pepper.
  • Thinly slice radishes into half-moons.

  • In a large non-stick pan, melt 2 tbsp (4 tbsp) butter over medium.

  • Remove from heat, then stir in 1/2 tsp (1 tsp) lemon zest.

  • On a foil-lined baking sheet, arrange flatbreads. (NOTE: For 4 servings, use 2 foil-lined baking sheets. Bake in the middle and bottom of the oven.)
  • Bake flatbreads in the middle of the oven for 3-4 min, until golden. (TIP: Keep an eye on them so they don't burn.)
Assemble and bake flatbreads

  • Remove flatbreads from the oven. 
  • Top with Monterey Jack cheese and half the Parmesan.
  • Return flatbreads to the oven and bake for 4-5 min, until cheese melts. (TIP: Keep an eye on them so they don't burn.)

  • Meanwhile, in a large bowl, whisk together 1/2 tsp (1 tsp) sugar, 1/2 tbsp (1 tbsp) lemon juice and 1 tbsp (2 tbsp) oil. Season with salt and pepper.
  • Add arugula-spinach mix, tomatoes and radishes. Toss to coat.
Finish and serve

  • Carefully cut flatbreads in halve crosswise, then cut into equal-sized strips.
  • Divide jumbo shrimp and white wine sauce between bowls. Alongside, divide cheesy bread dippers and salad between plates.
  • Sprinkle remaining Parmesan over salad.
