Cooking Steps

  • Cut potatoes into 1/2-inch wedges.
  • Add potatoes and 1 tbsp oil to an unlined baking sheet. Season with cream sauce spice blend, 1/4 tsp garlic salt and pepper, then toss to coat. Roast in the middle of the oven, flipping halfway through, until tender and golden-brown, 25-28 min. 
  • When potatoes are done, transfer to a large bowl. Sprinkle parmesan over top, then toss to coat.

  • Meanwhile, thinly slice chives.
  • In a small serving bowl, add sour cream, mayo, 1.5 tsp white wine vinegar, half the chives and 1/4 tsp garlic salt. Season with pepper, then stir to combine.

  • Place dip in the middle of a large platter or plate. Sprinkle crispy shallots and remaining chives over top. 
  • Arrange cheesy potato wedges around the bowl for dipping.
