Cooking Steps

1 BAKE SWEET POTATOES

Preheat the oven to 450°F (to bake sweet potato fries). Start prepping when the oven comes up to temperature! Wash and dry all produce.* On a baking sheet, toss sweet potatoes with 1 tbsp oil (dbl for 4 ppl). Season with salt and pepper. Bake in middle of oven, turning sweet potatoes over halfway through cooking, until golden-brown, 22-24 min.

2 PREP & MAKE AIOLI

Meanwhile, peel, then mince or grate garlic. Zest, then juice lemon(s). Cut tomato into 1/4-inch slices. Peel, pit and thinly slice avocado(s). In a small bowl combine mayo, sour cream, lemon zest, 1 tbsp lemon juice (dbl for 4 ppl). Season with salt and pepper. Stir to combine. Set aside.

3 MAKE TURKEY PATTIES

In a medium bowl, combine turkey, panko, garlic, mustard, 1 tbsp Southwest Spice Blend (dbl for 4 ppl), 1/4 tsp salt (dbl for 4 ppl). Season with pepper. Form turkey mixture into two 4-inch wide burger patties (four patties for 4 ppl). (NOTE: Your mixture may look wet, this is normal! )

4 COOK PATTIES

Heat a large non-stick pan over medium heat. When the pan is hot, add 1/2 tbsp oil (dbl for 4 ppl), then patties. Pan-fry, until patties are golden-brown and cooked through, 5-6 min per side. (TIP: Cook to a min. internal temp. of 74°C/165°F.**)

5 TOAST BUNS

Meanwhile, halve buns, then arrange them cut-side up on another baking sheet. Toast in top of oven, until golden-brown, 4-5 min. (TIP: Keep your eye on them so they don't burn!)

6 FINISH AND SERVE

Spread half the lemon aioli on buns, then layer with patties, spinach, tomato slices and avocado slices. Divide burgers and sweet potato fries between plates. Serve with remaining lemon aioli, for dipping.
