Cooking Steps

Prep

  • Before starting, preheat the oven to 450˚F. Wash and dry all produce.
  • Peel, then mince or grate garlic.
  • Finely chop parsley.
  • To a large bowl, add Beyond Meat® patties, breadcrumbs, half the garlic, half the Zesty Garlic Blend and 1/8 tsp (1/2 tsp) salt. Season with pepper, then combine.
  • Line a baking sheet with parchment paper.
Roast Beyond Meat® meatballs

  • Roll mixture into 8 (16) equal-sized meatballs.
  • Arrange on the prepared baking sheet.
  • Roast in the middle of the oven fot 10-12 min, until golden and cooked through.**
Cook couscous

  • Meanwhile, to a medium pot, add broth concentrate, remaining Zesty Garlic Blend, 2/3 cup (1 1/3 cups) water and 1/8 tsp (1/4 tsp) salt. 
  • Cover and bring to a boil over high. (TIP: For an even more flavourful couscous, add 1 tbsp [2 tbsp] butter!)
  • Once boiling, remove the pot from heat, then add couscous and half the dried cranberries (use all for 4 servings). Stir to combine.
  • Cover and let stand.
Make garlic sauce and dress spinach

  • Meanwhile, to a small bowl, add half the mayo (use all for 4 servings), half the tahini, half the parsley and remaining garlic. Season with salt and pepper, then stir to combine.
  • To a large bowl, add spinach and remaining tahini sauce. Season with salt and pepper. Toss to coat.
Glaze Beyond Meat® meatballs

  • Combine half the fig spread (use all for 4 servings) and 1/2 tbsp (1 tbsp) water in a medium bowl. Add meatballs, then toss to coat.
  • Fluff rice with a fork. Stir in remaining parsley.
Finish and serve

  • Divide couscous, spinach and Beyond Meat® meatballs between plates.
  • Drizzle garlic sauce over meatballs.
