Cooking Steps

Cook potatoes

  • Before starting, preheat the oven to 450°F.
  • Wash and dry all produce.
  • Remove any brown spots from potatoes. Peel, then cut potatoes into 1-inch pieces.
  • To a large pot, add potatoes, 2 tsp salt and enough water to cover (by approx. 1 inch) (use same for 4 servings). 
  • Cover and bring to a boil over high. Once boiling, reduce heat to medium-high. Simmer uncovered for 10-12 min, until fork-tender.

  • Meanwhile, peel, then mince or grate garlic.
  • Cut broccoli into bite-sized pieces.
  • In a shallow dish, combine breadcrumbs and half the Zesty Garlic Blend.
  • Pat chicken dry with paper towels, then season with salt and pepper.
  • Coat chicken all over with mayo.
  • Working with one chicken tender at a time, press both sides into the breadcrumb mixture to coat completely.
Cook chicken

  • Heat a large non-stick pan over medium.
  • While the pan heats, line a baking sheet with parchment paper.
  • When the pan is hot, add 1 tbsp (2 tbsp) oil and chicken. Cook for 3-5 min per side, until browned and cooked through.**
  • Transfer chicken to a plate.
  • Carefully wipe the pan clean.
Cook broccoli

  • Reheat the same pan over medium.
  • When hot, add 1 tbsp (2 tbsp) oil, broccoli, remaining Zesty Garlic Blend and 2 tbsp (4 tbsp) water. Season with salt and pepper. Cook for 4-6 min, stirring often, until broccoli is tender-crisp.
Finish smashed potatoes

  • While broccoli cooks, drain and return potatoes to the pot, off heat.
  • Roughly mash garlic, 2 tbsp (4 tbsp) butter and 1/4 cup (1/2 cup) milk into potatoes until slightly mashed. (NOTE: 'Smashed' potatoes will still have a few chunks!) Season with salt and pepper.
Finish and serve

  • Thinly slice chicken.
  • Divide chicken, broccoli and smashed potatoes between plates.
  • Serve BBQ sauce on the side for dipping.

If you've opted to get chicken breast tenders, prep and cook in the same way the recipe instructs you to prep and cook chicken breasts. Increase frying time to 3-5 min per side, until cooked through.** Transfer chicken to a plate and cover to keep warm.
