Cooking Steps

  • Peel, then cut potatoes into 1-inch pieces.
  • To a large pot, add potatoes, 2 tsp salt and enough water to cover by approx. 1 inch (use same for 4 servings). 
  • Cover and bring to a boil over high heat.
  • Once boiling, reduce heat to medium-high. Simmer uncovered until fork-tender, 10-12 min.
  • Drain and return potatoes to the same pot, off heat.

  • Meanwhile, trim ends off broccolini, then cut any larger stalks in half lengthwise, leaving thinner stalks whole.
  • Thinly slice green onions.
  • To a large bowl, add beef, egg, breadcrumbs, half the green onion, 1/2 tsp (1 tsp) garlic salt and 1/4 tsp (1/2 tsp) pepper.
  • Mix well to combine.

  • Divide beef mixture in half (divide into four for 4 servings) and form each portion into 1-inch thick ovals.
  • Wrap each oval in bacon. 
  • To a parchment lined baking sheet, arrange meatloaves.
  • Spread BBQ sauce over tops of meatloaves.
  • Bake in top of the oven until cooked through, 12-14 min.**

  • To an unlined baking sheet, add broccolini, 1/4 tsp (1/2 tsp) garlic salt and 1 tbsp (2 tbsp) oil Season with pepper, then toss to combine. 
  • Roast in the top of the oven, flipping halfway through, until tender-crisp, 8-10 min. (TIP: Broccolini can burn quickly, so keep an eye on it!)

  • Meanwhile, add  3 tbsp (6 tbsp) milk, 2 tbsp (4 tbsp) butter and remaining green onions to a small pot.
  • Heat the pot over medium heat, stirring occasionally, until butter melts.
  • Pour milk mixture to the pot with the potatoes.  Mash until creamy.
  • Season with salt and pepper, to taste.

  • Divide bacon-wrapped meatloaves, mashed potatoes and broccolini between plates.
