Cooking Steps

Prep and marinate veggies

  • Before starting, lightly oil the grill. While you prep, preheat the grill to medium (approx. 400°F).
  • Wash and dry all produce.
  • Cut cucumber into 1/4-inch rounds.
  • In a medium bowl, whisk together vinegar and 1/2 tsp (1 tsp) sugar. Season with salt and pepper.
  • Add cucumbers and carrots, then toss to coat. Set aside. 
Make hoisin mixture and prep chicken

  • In a large bowl, combine Moo Shu Spice Blend and half the hoisin sauce (use all for 4 servings). Season with salt and pepper.
  • Pat chicken dry with paper towels, then cut into 1-inch wide strips.
  • To the same bowl, add chicken, then toss to coat. Then, drizzle 1/2 tbsp (1 tbsp) oil over top of coated chicken, flipping once more to coat again.
  • Gather chicken, buns, a clean plate and BBQ tools on a platter, then head out to grill.
Grill chicken and toast buns

  • Add chicken to one side of the grill. Grill for 4-6 min per side, until chicken is cooked through.**
  • When done, transfer chicken to the clean plate.
  • Meanwhile, halve buns, then add to the grill, cut-sides down. Close lid and grill for 1-2 min, until toasted.
  • Transfer buns to the platter.
Finish and serve

  • In a small bowl, combine spicy mayo and basil pesto. 
  • Spread spicy basil mayo on cut-sides of buns.
  • Stack chicken and some marinated veggies on bottom buns. Close with top buns.
  • To the bowl with remaining marinated veggies, add spinach and 1/2 tbsp (1 tbsp) oil, then toss to combine. Season with salt and pepper.
  • Divide sandwiches and salad between plates.
