Cooking Steps

  • Before starting, wash and dry all produce.
  • Bring a large pot of salted water to a boil over high.
  • Meanwhile, cut broccoli into bite-sized pieces.
  • Peel, then grate or mince garlic.
  • Thinly slice chillies  removing seeds for less heat. (TIP: We suggest using gloves when prepping chillies!)
  • To the boiling water, add rice noodles. Cook for 10-12 min, stirring occasionally, until tender but still slightly chewy to the bite.

  • Line a plate with paper towels. 
  • Snip one corner of beef package. Carefully drain and discard liquid. Transfer beef to prepared plate. 
  • Using tongs or a fork, separate layers of beef.
  • To a large bowl, add beef, garlic, and remaining oyster sauce.

  • To a medium bowl, add fish sauce,brown sugar, half the oyster sayce, and half the chilies. Season with salt and pepper. Stir to combine.

ARE NOODLES DONE HERE???

  • Drain rice noodles and rinse under warm water until slightly cool. Return to the pot. 
  • Heat a larg non-stick pan over medium-high.
  • When hot, add 1/2 tbsp (1 tbsp) oil, broccoli and 2 tbsp water. Season with salt and pepper. Cook for 2-4 min, stirring often until tender-crisp. Transfer to a plate.

  • Reheat pan over medium-high.
  • When hot, add 1 tbsp (2 tbsp) oil and beef mixture. Cook for 2-4 min, stirring often and separating beef as needed until browned.
  • Scrape beef mixure to one side of the pan. On the other side, add 1 tbsp (2 tbsp) butter.
  • Crack eggs over butter. Cook, stirring in a figure-eight pattern, until curds form and eggs are cooked through.**

  • Add noodles, broccoli and sauce mixture to pan with beef. Stir to combine.
  • Divide noodles between plates.
  • Sprinkle remaining chilies over top, if desired.
