Cooking Steps

  • Before starting, wash and dry all produce.
  • Bring a large pot of salted water to a boil over high.
  • Meanwhile, cut broccoli into bite-sized pieces.
  • Peel, then grate or mince garlic.
  • Thinly slice chillies, removing seeds for less heat. (TIP: We suggest using gloves when prepping chillies!)

  • To the boiling water, add rice noodles. Cook for 10-14 min, stirring occasionally, until tender but still slightly chewy to the bite.
  • Drain rice noodles and rinse under warm water until slightly cool. Return to the pot. Drizzle 1 tsp (2 tsp) oil. Toss to coat.

  • To a large bowl, add garlic, half the brown sugar, 1 tsp (2 tsp) oil and 1 tbsp (2 tbsp) oyster sauce. Stir to combine.
  • Line a plate with paper towels. 
  • Snip one corner of beef package. Carefully drain and discard liquid.  Transfer beef slab to prepared plate. Leaving in tact, pat dry with paper towels. 
  • Cut beef slab in half crosswise. 
  • Using tongs or hands, separate beef slices and add directly to marinade. Toss to coat. (TIP: Use your hands for the most even coverage!) Set aside.

  • To a medium bowl, add fish sauce, remaining brown sugar, remaining oyster sauce, half the chilies and 2 tbsp (1/4 cup) water. Season with salt and pepper. Stir to combine.
  • Heat a large non-stick pan over medium-high.
  • When pan is hot, add 1 tsp (2 tsp) oil, broccoli and 2 tbsp water. Season with salt and pepper. Cook for 2-4 min, stirring often until tender-crisp. Transfer to a plate.

  • Reheat pan over medium.
  • When hot, add 1 tbsp (2 tbsp) butter. Swirl pan until butter melts. Crack egg into pan. Season with salt and pepper. Cook, stirring in a figure-eight pattern, until curds form and eggs are cooked through.** Transfer egg to pan with broccoli.
  • Reheat pan over medium-high.
  • When hot, add 1 tsp (2 tsp) oil and beef slices in an even layer. Cook for 2-4 min, flipping occasionaly and separating beef as needed until golden and cooked through.**

  • Remove pan from heat. Add noodles, broccoli, egg  and sauce mixture. Toss to coat.
  • Divide noodles between plates.
  • Sprinkle remaining chilies over top, if desired.
