Cooking Steps

  • Zest, then juice half the lemon. Cut remaining lemon into wedges.
  • Thinly slice chives.

  • Add cabbage coleslaw mix, half the chives, lemon juice (how much is there?),1/2 tsp (1 tsp) sugar and 1 tbsp (2 tbsp) oil to a medium bowl. Season with salt and pepper. Toss to coat.

  • Using a strainer, drain and rinse shrimp, then pat dry with paper towels.
  • Add shrimp, corn, old bay seasoning and 1 tbsp (2 tbsp) oil to an unlined baking sheet. Season with salt and pepper. Toss to coat.
  • Broil in the middle of the oven (stirring halfway?) until corn is lightly charred and shrimp is cooked, 5-6 min.**

  • Meanwhile, add half the yogurt sauce, 1 tsp (2 tsp) lemon juice and 1/2 tbsp (1 tbsp) oil to a large bowl. Season with salt and pepper. Stir to mix. This is your dressing!
  • Add ketchup, horseradish sauce and remaining yogurt sauce to a small bowl. Season with salt and pepper. Stir to mix. This is your drizzling sauce!

  • Add spring mix to bowl with dressing. Toss to coat.
  • Divide salad between plates.
  • Top salad with cabbage and shrimp and corn mix.
  • Drizzle with horseradish sauce. Sprinkle remaining chives overtop.
  • Squeeze a lemon wedge overtop if desired.
