Caramelizing turns the humble onion into an addictively savoury-sweet treat. Make it into a gravy, and you have a simple, flavourful sauce that will have everyone licking their plates clean! This sauce shines poured over subtly sweet mashed potatoes and savoury Beyond Meat® meatballs.

Cooking Steps

Cook potatoes

  • Before starting, preheat the oven to 450˚F.
  • Wash and dry all produce.
  • Remove any brown spots from potatoes, then peel and cut potatoes into 1-inch pieces. 
  • To a large pot, add potatoes, 2 tsp salt and enough water to cover (by approx. 1 inch) (use same for 4 servings). Cover and bring to a boil over high. 
  • Once boiling, reduce heat to medium-high. Simmer uncovered for 10-12 min, until fork-tender. 
  • Drain and return potatoes to the pot, off heat. 
  • Mash cheddar and 2 tbsp (4 tbsp) butter into potatoes until smooth. Season with salt and pepper.
Caramelize onions

  • Meanwhile, heat a large non-stick pan over medium.
  • While the pan heats, peel, then cut onion into 1/4-inch slices.
  • When the pan is hot, add 1 tbsp (2 tbsp) butter, then swirl the pan until melted.
  • Add onions. Cook for 8-10 min, stirring occasionally, until golden. Season with salt and pepper. (TIP: If onions are getting too dark, reduce heat to medium-low.)

  • Meanwhile, halve tomatoes.
  • To a large bowl, add panko and 2 tbsp (4 tbsp) milk, then stir to combine.
Make and roast Beyond Meat® meatballs

  • To the large bowl with panko, add Beyond Meat® patties, half the Worcestershire sauce and half the broth concentrate. Season with pepper, then combine. 
  • Roll mixture into 8 (16) equal-sized meatballs. 
  • On a parchment-lined baking sheet, arrange meatballs. Roast in the top of the oven for 10-12 min, until browned and cooked through.**
Make caramelized onion gravy

  • When meatballs are halfway done, to the pan with onions, add Gravy Spice Blend, remaining Worcestershire and remaining broth concentrate. Cook for 30 sec, stirring often, until onions are coated.
  • Gradually stir in 3/4 cup (1 1/2 cups) water. Increase heat to medium-high. Cook, stirring often, until gravy comes to a simmer.
  • Simmer for 2-3 min, stirring occasionally, until gravy thickens slightly. Season with salt and pepper, if you like.
Finish and serve

  • In a medium bowl, whisk together red wine vinegar, 1 tbsp (2 tbsp) oil and 1/4 tsp (1/2 tsp) sugar. Add spring mix and tomatoes. Toss to combine.
  • To the pan with gravy, add meatballs. Gently stir to coat.
  • Divide mash and salad between plates.
  • Arrange Beyond Meat® meatballs over mash. Spoon caramelized onion gravy over meatballs.
