Cooking Steps

Prep
1
  • Before starting, preheat the oven to 450°F. Wash and dry all produce.
  • Peel, then cut carrot into 1/4-inch coins. 
  • Cut cucumber into 1/4-inch coins. 
  • To a small bowl, add hummus and roasted pepper pesto. Stir to combine. 
  • To another small bowl, add cranberries, chocolate chips and cashews. Stir to combine. Set aside. 
Toast flatbreads

  • On an unlined baking sheet, arrange flatbreads.
  • Toast in the middle of the oven of the oven for 2-3 min, until softened. (TIP: You can also toast in a toaster!)
  • Allow to cool for 1-2 min, then cut into wedges. 
Start to arrange board

  • Remove cheese from packaging and cut into 1/2-inch cubes. Arrange in a triangle on of a large circular platter or board.
  • Arrange salami and chorizo in a slightly overlapping layer on one side of the cheese. 
  • Halve each piece of prosciutto lengthwise. (TIP: Use kitchen shears to cut directly through prosciutto). Lay proscuitto in a pile on the other side of the cheddar. 
Finish and serve

  • Place the bowl with cranberry-cashew mix in the middle of the board, then place the bowl of pesto hummus alongside.
  • Place carrots and cucumbers across from meat on 
    the board.
  • Fill remaining gaps on the board with grapes and flatbread wedges.
