Cooking Steps

Cook rice

  • To a medium pot, add 1 cup water and 1/4 tsp garlic salt. Cover and bring to a boil over high.
  • Meanwhile, using a strainer, rinse rice until water runs clear.
  • To the boiling water, add rice, then reduce heat to low. Cover and cook for 12-15 min, until rice is tender and liquid is absorbed. Remove from heat. Set aside, still covered.

  • Juice half the lime, then cut remaining lime into wedges.
  • Roughly chop cilantro.
  • To a small bowl, add spicy mayo, 1/8 tsp garlic salt and 1 1/2 tsp water, then stir to combine.
  • In another small bowl, combine carrots, lime juice, 1/4 tsp sugar and 1/8 tsp garlic salt. Set aside.
Cook pork

  • Heat a large non-stick pan over medium-high. When hot, add half the sesame oil, then pork. Cook for 4-5 min, breaking up pork into smaller pieces, until no pink remains.** Season with pepper. Add soy sauce and honey, then stir to combine.
Finish and serve

  • Fluff rice with a fork, then stir in remaining sesame oil and half the cilantro. 
  • Divide rice between bowls, then top with pork mixture. Divide carrots between bowls, then sprinkle crispy shallots and remaining cilantro over top. 
  • Drizzle spicy mayo over top.
  • Squeeze a lime wedge over top, if you like.
