Before starting, preheat the oven to 475°F.Remove pizza dough from fridge to come to room temperature in a warm spot, about 40 mins before starting. Add 6 cups water and baking soda to a large pot. Bring to a boil over high heat. While water comes to a boil, lightly oil a clean work surface. Divide dough into 4 pieces. Use both hands to roll each piece of dough into an 18-inch-long rope.Form a circle with each dough rope by bringing the two ends together. Cross the ends together to form a twist. Bring the twisted ends back down towards the bottom of the circle and press them down into the dough to form a pretzel shape.
Line a baking sheet with parchment. Add half the pretzels to the boiling water and cook for 30 sec. Using a slotted spoon, gently remove pretzels, letting any excess liquid drip off, then place on the prepared baking sheet. Repeat with remaining pretzels.Beat egg and 1 tsp water together in a small bowl. Brush pretzels all over with egg wash. Sprinkle tops with a pinch of salt. Bake in the top of the oven until golden brown, 12-14 min.
Peel, then mince or grate garlic.Add 3 tbsp butter to a small, microwave-safe bowl. Stir in garlic, then season with salt and pepper. Microwave until butter melts.
Remove pretzels from the oven and brush with garlic butter. Sprinkle Parmesan over top, then return to the top of oven for 1-2 min or until cheese is melted.Transfer cheesy soft pretzels to a plate. Serve with your favourite mustard!
