Cooking Steps

1

  • Cover and bring to a boil over high.

  • To the boiling water, add rice, then reduce heat to low. Cover and cook for 12-15 min, until rice is tender and liquid is absorbed.
  • Remove from heat. Set aside, still covered.
2
  • Meanwhile, heat a medium non-stick pan over medium-high heat. When hot, add sesame seeds to the dry pan. Toast, stirring often, until golden, 3-4 min. (TIP: Keep your eye on them so they don't burn!) Transfer to a plate.
3
  • To the same pan over medium, add BBQ sauce, soy sauce, sesame oil and honey.
  • Cook, stirring often, until warmed though and thickens slightly, 3-4 min.
4
  • Thinly slice green onions.
  • Cut four sections off nectarine(s), avoiding the pit. Cut each section into 1-inch pieces.
  • Peel, then cut onion into 1-inch pieces.
  • Roll sausage meat into 8 equal-sized meatballs (16 for 4 servings).
  • Alternately thread onions, nectarines and sausage onto skewers.
5
  • Add skewers to grill. (TESTER: Brush with oil? )Reduce heat to medium, close lid and grill, turning often, until sausage is cooked through and onions are tender, 3-4 min per side.**
  • Once sausage is cooked through, brush skewers all over with BBQ sauce mixture.
  • Cook, turning occasionally, until sauce has thickened slightly, 1-2 min.
6
  • Fluff rice with a fork, Add 1 tbsp (2 tbsp) butter, then green onions. Stir to combine.
  • Divide rice between plates.
  • Top with sausage skewers, then drizzle over remaining BBQ sauce.
  • Sprinkle with sesame seeds.
